SHIFTING UP A GEAR:
Technology is future-proofing
cycling and making rides smarter

Mention "3D Motion Capture" and you would probably be referencing the next Hollywood big screen CGI production. But Japanese cycling giant Shimano is now using the technology to offer the ultimate "bike fitting" service---ensuring every last nook and cranny of your ride is tailor-made for its engine: your body.

Nine data-capturing modes  grab motion, measuring the angles of joints including shoulders, knees, hips and even heels. As well as boosting performance,  its system can help eliminate the injuries that result  from a poorly-set up Sunday Steed.

The really smart bit is the fully adjustable dynamic "position simulator" jig. Linked to the system's graphical user interface and using a multitude of sensors to determine your ride geometry---right down to having the correct seat and bars. Shimano Bikefitting is able to determine where the power is or isn't going.

There is no end to the tweaks which will improve your ride.  After the fitting you will have the necessary data to either build your ultimate bike or refine your current set-up.

It's probably as close to a maximum  performance boost as you can get. And what cyclists worth their salt would say no to that?

HAUTE CUISINE:
Renaissance Man Cecil Beaton's
Family Recipe

"I get fancies about food from friends and relatives--- not from cookbooks," Cecil Beaton was fond of telling friends. When he wasn't photographing the famous and designing theatre and movie costumes (My Fair Lady, for example), the bon vivant Brit enjoyed the spending time creating in his kitchen.

His recipe---as follows--- for Chilean Empanadas can be linked to his close relationship with his Aunt Jessie, who lived for a time in South America.

Filling:
3/4 lb round steak
2 cups chopped onions
3 teaspoons olive oil
2 teaspoons raisins
1 teaspoon salt
1/2 teaspoon cumin
8 green olives chopped
1/2 teaspoon sugar
1/2 cup hot water
1 hard boiled egg

Sear both sides of the steak in a hot frying pan. Chop fine and set aside. Add the olive oil to the pan and saute all remaining ingredients---except for the egg---until the onions are brown. Then add the chopped steak, water and finely chopped egg.

Pastry:
2 cups sifted flour
1/2 cup boiling water
4 tablespoons melted butter
1 egg yolk
1 teaspoon salt
1 teaspoon sugar

Combine ingredients and roll dough out to the thickness of a penny. Cut into 3-inch rounds. Place a tablespoon of the stuffing in the center and fold in two, pinching the edges firmly. Fry empanadas in deep fat and sprinkle with sugar as they are taken out.

Simple, tasty and as English as the Union Jack!
